Fiction To Sink Your Teeth Into, a feature from author and professional chef Rohan O’Duill!
This dish was inspired by Sujay, probably my favourite character from Cascade. I can imagine this dish being served up in Sujay’s home and I hope you will enjoy it too.

Snack Ingredients
- 250g split lentils
- 1 onion
- ½ bulb of garlic
- 1 tsp of garam masala
- Cracked pepper and sea salt
- Chutney for dipping
Method
Soak the lentils overnight. Strain the lentils and blend well in a food processor and place in a bowl.
Sauté the onions and garlic in a pan with a little oil and the garam masala. Allow to cool and blend in the processor.
Add to the bowl of lentils with some salt and pepper and whisk until it resembles cake batter. If it’s a bit wet, you can add some gram flour.
Heat up 1” of oil in a pot or use a deep fat fryer if you have one. I used mark 7 on my stove.
Wet your hands and take out a bit of dough and form it into a patty shape. Stick your finger through the middle for the whole and place gently into the oil. Allow to cook until golden brown.
WARNING: Open pans of oil are extremely dangerous; do not leave unattended at any stage. Serve with a nice chutney. I had a fermented apricot and ginger chutney that I had made last Christmas.
Sit back with a chilled bottle of Lion beer and curl up with Cascade.
