I really love the atmosphere created by Gibson in this book. The smell and sizzle from the yakitori stalls are a small detail that adds to the masterpiece that is a cyberpunk Chiba.
Snack sized

Ingredients
• 100ml soy sauce
• 75ml mirin
• 50ml sake
• 2 tbsp brown sugar
• 350g diced chicken
• 3 spring onions cut into 1” lengths
• Cracked pepper and sea salt
• Bamboo skewers
Method
Soak the bamboo skewers in water for 15 minutes before you start.
Put the soy sauce, mirin, sake and sugar into a pot and simmer at a low heat for 10-15 minutes, until the sauce has reduced to a sticky consistency.
Thread the chicken and spring onion onto the skewers alternatively.
I used my kamado charcoal grill, but you could use any BBQ or a griddle pan. Just make sure it is good and hot, as otherwise the chicken will stick.
Pop the skewers on the grill and brush the sticky sauce over them. Continue to turn the skewers and brush with sauce until the chicken is cooked through.
Then sit back with a nice glass of sake or a beer, jack out of the matrix and enjoy the Yakitori.
